We had guests for dinner today and it was such a hot day that I felt like trying something summery for dessert.
Jamie Oliver’s British cookbook proved a good source for this and I settled on lemon cheesecake possets. Apparently possets originally are a type of drink but have developed into a dessert over time. Jamie has added a cookie-crumb base to make it into a little treat resembling cheesecake.
It was quite a bit of work, lots of simmering and whisking. But the result was lovely. Creamy, lemony goodness on top with a bit of a sweet and crunchy base underneath. Quite sour though – I think I’ll reduce the amount of lemon juice I use next time. But as we say in German: sour makes you cheerful.
